Thai Lime Chicken
- 2 lbs chicken breast, 1-inch cubes
- 1 c fresh lime juice
½ c fish sauce
⅓ c extra-virgin olive oil
- 2 T coconut nectar
- 1 t ginger
- 1 t mint, rough chop
- 2 t cilantro, rough chop
- Add chicken to pressure cooker.
- In a large mixing bowl, combine lime juice, fish sauce, olive oil, coconut nectar, ginger, mint, and cilantro. Pour over chicken. Set pressure cooker to "poultry". Adjust time to 10 minutes and press "start/stop".
- When done, quick release and make sure all pressure is released before opening lid. Carefully open lid and check seasoning. Add salt and pepper, if needed. Drain liquid from pot. Serve.
