- 1 c quinoa
- 2 c water
- Pinch of salt and pepper
- 2 scallions, sliced thin
½ lemon, juiced
- 1 T extra-virgin olive oil
- Add quinoa, water, salt, and pepper to the pressure cooker.
Close and lock lid, set to multi grain, and adjust for 2 minutes.
- When done, quick release and make sure all pressure is released before opening lid. Stir the quinoa, add lemon, scallions, and olive oil. Let cool and serve as a side or main dish.
