- 3 cloves garlic, minced
- 3 T ginger, minced
- 2 c tomato sauce
- 1 T garam masala
- 1 T cumin
- Pinch of salt and pepper
- 14 oz coconut milk
- 2 c spinach
- 8 oz paneer cheese
- Add all ingredients to pressure cooker except for the spinach and cheese.
Cover with glass lid and set to "slow cook" for 2 ½ hrs.
- In the last half hr, remove lid and stir in spinach.
- Replace lid and finish cooking.
- Remove lid, add cheese, and blend contents. Serve with a bowl of quinoa.
