Orange Cranberry Cookies
- 1 c sugar
¾ c butter, unsalted, softened
- 1 egg
- 2 c all-purpose flour
- 1½ t baking powder
- ¼ t baking soda
- ½ c dried cranberries, chopped
- 1 T orange peel, freshly grated
⅓ c sugar, granulated
- 1 t orange peel, freshly zested
For Sugar Mixture
Preheat oven to 350°F. Combine all sugar mixture ingredients in small bowl. Stir until well mixed; set aside.
In a separate bowl, using an electric mixer, combine sugar, butter, and egg. Beat until creamy.
Reduce speed and add flour, baking powder, and baking soda. Beat until mixed well.
- Add remaining ingredients. Beat until combined.
Shape cookies into 1-inch-sized balls and roll in reserved sugar mixture. Place 2 inches apart on ungreased baking pan.
Bake for 6 to 10 minutes or until edges are light brown. Cool for 1 minute. Remove to a wire rack to cool completely.
