Ingredients
- 3 tablespoons exttra virgin olive oil

1 small white onion, diced

2 tablespoons minced garlic

½ cup fresh basil, finely chopped

1 (6-ounce) can tomato paste

5 (28-ounce) cans whole peeled tomatoes, crushed by hand

2 tablespoons sea salt

2 tablespoons sugar

Fresh cracked black pepper to taste
Directions
- Set Skillet to 350ºF and add oil, onion, and garlic, then sauté for 3-4 minutes.

Add tomato paste and stir to incorporate and darken slightly.

Reduce to 275ºF and add crushed tomatoes, salt, sugar, and pepper then cover.

Simmer for 2 hours, stirring occasionally.

Fold in basil and let cool or serve immediately

If sauce bubbles too much, reduce the temperature.
