2 T water
- 2 C walnuts
- 2 C cashews
½ C pumpkin seeds
½ C sunflower seeds
½ C shredded coconut
½ C dry cranberries
¼ C maple syrup
- 3 t vanilla extract
- Pinch of cinnamon
- Pinch of salt
In a bowl, whisk together egg and water.
Add all of ingredients into blender jar except cranberries.
Using the plunger lid, pulse granola mixture for 8 seconds.
Once finished, open the lid and pour mixture onto a sheet pan lined with parchment paper.
Add cranberries to mixture.
Place in an oven and bake at 300°F for 25 minutes.
Remove from oven and allow to cool and harden for 20-25 minutes.
Break granola into clusters, serve, and enjoy.
