Cumin & Carrot Soup
- 10 oz carrots, peeled, diced
- 1 T rice vinegar
- Sea salt to taste
⅛ t white pepper, ground
- 2 C chicken or vegetable stock
- 1 t cumin, ground
- 2 T chives, crushed
- Combine all ingredients except chives to blender.
Blend on "Soup" for 5 minutes. When blender stops, set to "Soup" again and blend an additional 3 minutes.
- Carefully remove lid. Serve with chives.
