Broccoli Cheese Soup
- 2 C vegetable stock
2½ C broccoli florets
½ white onion, diced
- 1 C cheddar cheese (plus extra for garnish)
- Pinch of salt and pepper
- 4 T heavy cream
- Add stock, broccoli, cream, and onions into the jar.
Using the plunger lid, set to "Soup" and blend for 6 minutes.
- Carefully remove lid. Season with salt and pepper and add in cheese. Pour into serving bowls.
- Garnish with more cheese and broccoli.
- Serve and enjoy.
